Ingredients:
300 gm cubed lamb
150 gm cooking-fat
2 onions
150 gm runner beans
2 courgettes
1 large aubergine
1 cup (150 gm) fresh or tinned okra
250 gm tomatoes
2 green peppers
3 cups water
1 tblsp vinegar (for soaking fresh okra)
salt and pepper
Directions:
  1. String and slice the runner beans.

  2. Cut the courgettes and aubergines into cubes.

  3. Trim the okra by paring the conical ends as thinly as possible, and place in a cup of water containing 1 tablespoonful of vinegar and 1 tablespoon of salt

  4. Saute meat and onions in a saucepan or casserole in half the fat until the meat is browned.

  5. Add runner beans and one cup of water and simmer over a moderate heat for 15 minutes.

  6. Fry the aubergines lightly in remaining fat.

  7. Rinse okra.

  8. Add all the prepared vegetables to the pan, with 2 teaspoonfuls of salt,

  9. pepper to taste and two cups of water.

  10. Simmer gently until all the vegetables are tender, about 45 minutes.

  11. Serve with fresh bread or pilaf.
