Patlican Musaka (aubergine musakka)

4 aubergines
2 onions
2 tomatoes
250 gm minced meat
2 tblsp margarine
Wash the aubergines and peel alternate lengthwise strips (peel three strips leaving strips of peel between each).
Cut into circular slices, each slice being 1 1/2-2 cm wide.
Fry lightly in the melted margarine and arrange in a fairly shallow baking tin or saucepan.
Fry the chopped onions and minced meat in the remainder of the margarine, add the chopped tomatoes.
cook for a few minutes more.
Cover the aubergine slices with this minced meat mixture.
Add I cup water and simmer on a low heat or bake in the oven for about 30 minutes until the aubergines are cooked.
To serve garnish with sprigs of parsley.
